1 cup mayo
2 Tbsp vinegar
1 1/2 tsp salt
1 tsp sugar
dash of pepper
5 medium (red) potatoes, chopped & cooked
1 cup celery
1/2 cup chopped onion
3 eggs, hard boiled*
1-2 Tbsp chopped green onion (garnish)
1. Combine mayonnaise, vinegar, salt, sugar and pepper to taste.
2. Combine remaining ingredients. Pour mayo mixture over chopped ingredients. Toss and chill for 2+ hours.
* To avoid food poisoning, make sure eggs cool completely before adding to salad.
