Super Peach Pie

7-8 large peaches
2 cooked pie shells
1 cup sugar
4 Tbsp cornstarch
1/2 cup water
1/2 tsp almond extract
2 Tbsp butter
whipped cream - optional

1. Slice 3 - 4 large peaches into two cooked pie shells.

2. Mash 3 more peaches and add sugar, cornstarch, and water. Cook five minutes, until it boils. Stir often so it doesn't burn.

3. Add the almond flavoring and butter. Pour over sliced peaches. Chill. Serve with whipped cream if desired (but very good alone).

*You can also use frozen pie crust (which usually come in packages of two)
*If you use a deep dish pie crust then only one pie crust is necessary.
