Asian Chicken Salad with Gigner Peanut Dressing

1 chicken breast, cooked and cubed or shredded
2 carrots, julienned
1 gala apple, cored, and cut in strips
1/2 red bell pepper, cut in strips
1/2 yellow bell pepper, cut in strips
1/2 head romaine lettuce, chopped OR desired greens
1 recipe ginger peanut dressing (recipe follows)
toppings (list follows)

Combine all ingredients but dressing and toss. Let individuals pour their own dressing as well as add toppings.

Ginger Peanut Dressing
:
1/4 cup peanut oil
3 Tbsp creamy peanut butter
2 Tbsp rice vinegar
1 Tbsp soy sauce
2 tsp brown sugar
1 tsp peeled minced ginger root
1 tsp Asian chili paste

Additional toppings that make it even better:
1/2 cup canned fried chow mein noodles
1/4 cup dry roasted peanuts, whole or chopped
1 green onion, diced
