Banana Cookies with Lemon Frosting

1/2 cup shortening
1 cup brown sugar
2 eggs
1 cup bananas (2 or 3), smashed
1/4 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp cloves
2 cups flour
6 oz chocolate chips (optional)
1 recipe lemon frosting - as follows (optional)

1. Cream together shortening, brown sugar, eggs and bananas. Sift in soda, powder, salt, cinnamon, cloves, and flour. Mix thoroughly. Stir in chocolate chips (I usually don't).

2. Spoon heaping tablespoons onto cookie sheet and bake at 350 degrees for 8-10 minutes.

3. Let cool and top cookies with frosting if desired (I usually DO).

Lemon Frosting Recipe*
3 cups powdered sugar
1/2 cup butter
2 Tbsp +/- lemon juice; adjust until you have the right consistency.

*NOT meant to be a glaze.

Because these are cake-like the cookies freeze well - not the batter, but the cookies. Cold banana cookies on a hot day are awesome.
