California Blue Ribbon Winner Zucchini Bread


3 cups flour
2 1/2 cups sugar
2 cups grated zucchini
1 cup oil
1/2 cup raisins and/or nuts
3 tsp cinnamon
3 tsp vanilla
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
3 eggs

1. Beat eggs together and add in the oil, vanilla and sugar. Stir in zucchini and mix well.

2. Sift flour, baking soda, salt, baking powder and cinnamon together. Mix wet ingredients and dry together well.

3. Add in raisins and/or nuts.

4. Place in two greased loaf pans and bake for 1 hour at 325 degrees.

Freezes well.
